What is cacao?
Recent studies have shown that eating dark chocolate that is high in cacao, the bean from which chocolate is made, has certain health benefits. Researchers have found that minimally processed cacao contains antioxidants which have been shown to decrease blood pressure, defend against free radicals which trigger cancer, heart disease and stroke, and provide other health benefits.

 

Can I buy Pearson’s 5# Salted Nut Roll?

What were the flavors for the 7-Up candy bar?
The 7-Up candy bar fillings changed throughout the years as commodities fluctuated and consumer preferences dictated. For example, in 1962 the flavors were: Brazil nut, coconut cream, milk caramel, maple walnut, chocolate pudding, fruit jelly, and vanilla cream. When the candy bar was discontinued in 1979, the flavors were: butterscotch caramel, cherry cream, fudge, orange jelly, nougat, coconut, and butter cream.

 

Will Pearson’s produce the 7-Up candy bar again?
Due to decreasing sales Pearson Candy Company ceased to manufacture the 7-Up candy bar in the late 1970's. We no longer possess the equipment necessary to manufacture this item. Additionally, the 7-Up name was returned for exclusive use by the bottling company. It is for these reasons that Pearson’s has no plans to produce the 7-Up candy bar again.

 

Can I schedule an Animal Ambassador Program?
Pearson Candy Company is pleased to continue offering our Animal Ambassador Program to the community! Not only is the program educational, but it’s a fun and sometimes hands-on experience! Since Pearson’s does not schedule the programs directly from our office, we will refer you to someone else. Please contact Marthe @ (763) 576-0450 to determine if your group qualifies and then schedule accordingly. If Marthe is not available, please leave a message on her answering machine for a return call.

 

How can I determine the age for Pearson’s products?
Pearson’s imprints all packaging with an open date code. This means that if you look at the package you should find a statement “Best Before” with a date in a traditional month/day/year format (i.e. Best Before 12/15/09). Or, the package will be imprinted with a statement “BB” with a date in the traditional month/day/year format (i.e. BB 12/15/09). There may be an alphabetic and numeric character that follows the open date code that is utilized for production use only.

 

Has the size of Pearson’s Bun Bar changed?
Since Pearson’s acquired the Bun trademark and began manufacturing the product approximately ten years ago, our finished bar weight has always been 1.75 ounces. Perhaps a taller bar height versus a flatter piece gives the illusion the candy bar weighs less.

 

Do Pearson’s Mint Patties contain caffeine?
Pearson’s Mint Patties do contain a small amount of caffeine originating from the chocolate. The serving size for our Mint Patties is five pieces and the amount of caffeine contained in the five Mints is 5.2 milligrams.

 

Can I purchase Nut Goodies in Canada?
Sorry, but due to labeling, ingredient and nutritional issues that differ between the US and Canadian government our Nut Goodies are NOT available in Canada from Pearson Candy Company.

Chocolate liquor is produced by grinding the cocoa bean nib into a microscopic size and by the added heat of friction; the cocoa butter in the bean is melted. This liquefied state containing the cocoa solids and cocoa butter is known as chocolate liquor. Please be assured that chocolate liquor does NOT contain alcohol.

Are Pearson’s products gluten free (i.e. celiac disease)?
Based upon the information that we have obtained from our ingredient and packaging suppliers, Pearson’s entire product line (Salted Nut Rolls, Mint Patties, Nut Goodies and Bun Bars) are considered to be gluten free. We look forward to your support of our candy items!

The ingredient invertase is a creaming agent utilized to smoothen a food’s texture.

Will the Limited Edition Chocolate Nut Roll become a permanent item?
Sorry, but the Limited Edition Chocolate Nut Roll has been strictly offered as a limited edition item with no plans to make this candy bar a permanent addition to our product line. Good news! We are planning another distribution for the Chocolate Nut Roll in fall 2009!

 

Is Pearson’s Nut Goodie and Maple Bun Bar the same item?
One of the reasons Pearson's acquired the "Bun" trademark was the similarity of this item to our popular Nut Goodie. Without divulging recipe/ingredient secrets, all we can tell you is that the Maple Bun Bar shares a similar manufacturing process as compared to the Nut Goodie. Most people who like one of the bars usually will find the other just as satisfying.

 

Is Pearson’s maple flavoring artificial or natural?
The maple flavor which Pearson’s purchases are already pre-blended in a single container containing both real (natural) maple syrup and an artificial maple flavor.

 

Why does my Pearson’s Mint Jar have a short piece count?
Actually the product is packaged and sold by net weight versus a specific count. The federal government has strict guidelines for product weight which Pearson’s must comply. Our piece weight actually does fluctuate slightly dependant upon manufacturing variances with the centers and chocolate coverage. The piece count we supply is an average amount appearing in the jar and for general consumer information only. Sorry for any confusion!

 

Will Pearson’s be introducing any new items?
As you can imagine, it is actually a very expensive process to successfully launch a new item. It takes a great amount of time and monetary investment to research a new item to even determine if it is a viable item. Then, there are costs associated with starting a new production line, obtaining the product's packaging, and planning an aggressive coupon program for the consumer. Lastly, the shelf space for most retailers is a precious commodity and normally requires payment for a product's appearance. Because of these reasons, Pearson's feels our time and efforts would be better spent pursuing distribution gaps for our current products and considering line extensions. We appreciate the interest expressed in our company!

 

Has the size of Pearson’s Nut Goodie changed?
For at least the last thirty years, our finished bar weight for Pearson’s Nut Goodie has always been 1.75 ounces. Perhaps a taller bar height versus a flatter piece gives the illusion the candy bar weighs less.

 

Does Pearson’s manufacture Nips?
While we share the common name “Pearson’s”, our company located in St. Paul, Minnesota only manufactures candy bar items (Salted Nut Rolls, Mint Patties, Nut Goodies and Bun Bars). Nips are produced by Nestle Foods USA and suggest you contact Nestle Foods directly for additional questions and/or assistance.

 

Are there any Pearson product recipes?
A popular recipe made with Pearson’s Mints is brownies. You make the brownies as usual then place half the batter in your pan. Unwrap the Mints and place on top of the batter without touching the sides of the pan. Cover the Mints with the rest of your batter and bake as usual. Simply delicious! Or, drop an unwrapped Pearson’s Mints in hot chocolate. Stir well and enjoy! Perhaps there are other recipes on the web too.

 

What is the Salted Nut Roll nougat center?
The center portion of the Salted Nut Roll is considered to be a "cream". Cream candies are essentially a combination of fondant (sugar, corn syrup, invertase and water), frappe (sugar, corn syrup, water and soy protein - a whipping agent), flavor and color. The fondant when cooked, cooled and beaten resembles a thick white paste and the frappe looks similar to that of marshmallow. If the fondant (with the color and flavor) was used alone, the result would be a rather dense product. Therefore, a lighter texture is obtained by the inclusion of "frappe".

 

Does Pearson’s offer any tours?
Sorry, but Pearson’s does NOT offer any public tours of our production facility. The reasons that tours cannot be accommodated include insurance provisions, general safety concerns, and most importantly exposure of trade secrets. We appreciate your interest in our company!

 

Why does Pearson’s utilize trans fat in their products?
Pearson’s is currently looking into re-formulating our Salted Nut Roll candy bars to eliminate trans fat. However, this would entail replacing the partially hydrogenated soybean oil with an oil that does not contain trans fat. Needless to say, this is not a simple process requiring a great amount of time for proper research and development. After all, we don’t want to compromise the taste of Pearson’s Salted Nut Roll that everyone enjoys!

 

How do I file a complaint regarding a Pearson’s product?
We apologize if our candy did not meet Pearson’s usual high standards that you expected. Please click on “Contact Us” and complete the on-line “complaint” form supplying the data as directed. We will then pass along this information to our Quality Control Department for further review. If you provide your complete mailing address, we can respond to you. What is Pearson’s donation policy?
We appreciate your interest to contact Pearson Candy Company regarding a possible donation for your upcoming event! Product donations (i.e. 25# Salted Nut Roll) are awarded on a limited monthly basis. All requests must be submitted in writing at least 8 weeks prior to event date. Please send your information to Pearson Candy Company – Attn: Donations – P.O. Box 64459 – St. Paul, MN 55164 or fax #651-696-2222. Unfortunately, company policy prohibits donations to school, sport, religious or political institutions because it would be beyond our capabilities to fulfill all requests fairly. Sorry, but no cash donations are provided by Pearson Candy Company.

 

Why does my chocolate appear white and/or gray in color?
When chocolate turns white or gray in color, one of two things could be the culprit: sugar bloom or fat bloom. Sugar bloom is normally caused by surface moisture. The moisture causes the sugar in the chocolate to dissolve. Once the moisture evaporates, sugar crystals remain on the surface. If this process is repeated, the surface can become sticky and even more discolored. Although sugar bloom is most often the result of overly humid storage, it can happen when the chocolate has been stored at a relatively cool temperature and is then moved too quickly into much warmer surroundings. When this happens, the chocolate sweats, producing surface moisture. Fat bloom is similar to sugar bloom, except that it is fat or cocoa butter that is separating from the chocolate and depositing itself on the outside of the candy. As with sugar bloom, the most common causes of fat bloom are quick temperature changes and overly-warm storage. Although it might look a little less appetizing than a lustrous, rich chocolaty-brown piece of candy, chocolate that has suffered bloom is still okay to eat. You may find the texture of sugar-bloomed chocolate to be a bit grainy on the outside, but it should still be edible.
